Ingredients:
1 1/2 cups (packed) fresh pineapple sage leaves, chopped
3 1/4 cups apple cider or apple juice
one packet of powdered no sugar pectin
1/2 tsp butter
4 cups sugar or 1 1 1/2 cups honey
Combine fresh pineapple sage leaves with apple cider or apple juice.
Bring to a boil and let steep 30 minutes.
Strain liquid from herbs .
Add pectin and butter.
Bring to a boil.
Add sugar or honey all at once.
Bring back to a boil and boil hard for one minute.
You can test the thickness of the jelly by putting a bit on a spoon then placing the spoon in the fridge for a few minutes to see if it jells. If it jells to a
consistency that you are happy with then it is done. If not and it is still too thin, cook it a little longer.
Pack into sterilized jars and seal. Tied with a ribbon and handmade hang tag, this makes a great gift or addition to an herbal gift basket.
